Instant Pot option: Use sauté to brown beef, add all ingredients, cook on high pressure for 35 minutes, natural release. - 1 tsp smoked paprika
- 0.5 tsp onion powder
- 1 tsp dried oregano
- 0.5 tsp dried thyme
- 0.5 tsp crushed red pepper flakes (optional, for heat)
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tbsp cornstarch (mixed with 2 tbsp water, for thickening)
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Prepare the beef by cutting into bite-sized pieces if not pre-cut. Halve the baby potatoes.
- Season the beef with salt, pepper, smoked paprika, onion powder, dried oregano, dried thyme, and crushed red pepper flakes (if using).
- Add the seasoned beef and halved potatoes to the slow cooker. Pour in melted butter, minced garlic, beef broth, and Worcestershire sauce. Stir to coat.
- Cover and cook on low for 6–8 hours or on high for 3–4 hours, until beef is tender and potatoes are soft.
- Optional: For a thicker sauce, mix cornstarch with water to make a slurry, stir into the slow cooker, and cook 15 minutes more to thicken.
- Garnish with chopped fresh parsley and serve warm.
