Paleo Chicken and Sweet Potato Stew
Cut sweet potatoes into evenly sized cubes (about 1-inch) so they cook at the same rate. Homemade or low-sodium broth helps control salt; season to taste after cooking if desired. If your crockpot runs hot, check doneness at 5.5–6 hours to prevent overcooking. For a thicker stew, mash a few sweet potato cubes into the broth after shredding the chicken. Serving ideas: enjoy as-is or with cauliflower rice or steamed greens. Storage: refrigerate in airtight containers up to 3–4 days; freeze up to 3 months. Ingredients
- 4 boneless, skinless chicken breasts
- 2 large sweet potatoes, peeled and cubed
- 1 cup chicken broth (preferably homemade)
- 1 tablespoon ground cumin
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- Add the cubed sweet potatoes on top of the chicken.
- Pour the chicken broth over the ingredients and sprinkle the cumin over the top.
- Cover the crockpot and cook on low for 6-7 hours or until the chicken is tender and the sweet potatoes are soft.
- Shred the chicken using two forks and stir to combine all the ingredients before serving.
