Paleo Chicken and Sweet Potato Stew

Cut sweet potatoes into evenly sized cubes (about 1-inch) so they cook at the same rate. Homemade or low-sodium broth helps control salt; season to taste after cooking if desired. If your crockpot runs hot, check doneness at 5.5–6 hours to prevent overcooking. For a thicker stew, mash a few sweet potato cubes into the broth after shredding the chicken. Serving ideas: enjoy as-is or with cauliflower rice or steamed greens. Storage: refrigerate in airtight containers up to 3–4 days; freeze up to 3 months. Reheat gently to avoid drying out the chicken.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 cup chicken broth (preferably homemade)
  • 1 tablespoon ground cumin

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the cubed sweet potatoes on top of the chicken.
  3. Pour the chicken broth over the ingredients and sprinkle the cumin over the top.
  4. Cover the crockpot and cook on low for 6-7 hours or until the chicken is tender and the sweet potatoes are soft.
  5. Shred the chicken using two forks and stir to combine all the ingredients before serving.
