Slow Cooker Garlic Butter Beef Bites & Potatoes

Optional but recommended: sear the beef for 2–3 minutes per side to deepen flavor. For a thicker sauce, transfer cooking liquid to a saucepan and whisk in 1 tbsp cornstarch mixed with 1 tbsp water; simmer until thickened. Add vegetables like carrots, green beans, mushrooms, or onions for extra flavor and nutrition. For a spicier version, add a pinch of red pepper flakes or cayenne to the garlic butter. Use fresh thyme and rosemary if desired; reduce amounts slightly compared to dried. To keep it gluten-free, use certified gluten-free beef broth and seasonings. Instant Pot option: Sauté to sear beef and cook garlic, then pressure cook on High for about 35 minutes; quick release. To crisp the potatoes after cooking, broil them on a sheet pan for 5–7 minutes. Storage: refrigerate leftovers in an airtight container up to 3 days. Freezing: freeze up to 2 months; thaw overnight in the refrigerator before reheating. Ingredients

  • 1.5 lb beef chuck roast or stew meat, cut into 1-inch pieces
  • 1 lb baby potatoes, halved (or quartered if large)
  • 4 tbsp unsalted butter, melted
  • 4 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • 1/4 cup beef broth
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear the beef bites until browned on all sides, about 2–3 minutes per side. Transfer to the slow cooker.
  2. In a small bowl, mix melted butter, minced garlic, thyme, rosemary, smoked paprika, onion powder, salt, and pepper.
  3. Place the halved baby potatoes in the bottom of the slow cooker and drizzle with half of the garlic butter sauce. Add the seared beef bites on top of the potatoes and drizzle with the remaining garlic butter sauce. Pour the beef broth over everything.
  4. Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the beef is tender and the potatoes are cooked through.
  5. Stir gently to coat the potatoes and beef in the sauce. Sprinkle with chopped fresh parsley before serving. Serve warm.
