Indulgent Seafood Gratin Recipe: A Quick and Creamy Delight

Indulgent Seafood Gratin Recipe: A Quick and Creamy Delight

Pat shrimp and scallops very dry before cooking to prevent excess liquid and ensure good browning. Do not overcook the seafood on the stovetop—cook just until shrimp turn pink and scallops are opaque (about 3 minutes). If using dry white wine instead of grape juice, let it simmer 2–3 minutes to cook off some alcohol before adding cream. For a deeper golden top, broil for 1–2 minutes at the end; watch closely to avoid burning. Adjust sauce consistency before baking: simmer briefly to reduce if thin, or add a small splash of cream if too thick. Storage: Refrigerate leftovers in an airtight container for up to 2 days. Reheat gently at 160°C/325°F until hot. Freezing is not recommended due to texture changes in dairy and seafood.

Servings: 4

Ingredients

  • 454 g peeled and deveined shrimp (fresh or thawed)
  • 454 g fresh scallops, chopped into bite-sized pieces
  • 28 g butter (for sautéing)
  • 1 medium onion, finely chopped (about 110 g)
  • 2 cloves garlic, minced (about 6 g)
  • 240 ml heavy cream
  • 240 ml white grape juice (or dry white wine)
  • 113 g grated cheese (such as Gruyère or cheddar)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Start by thawing and drying your shrimp and scallops if frozen. Chop the onion finely and mince the garlic to enhance their flavors.
  2. In a large skillet over medium heat, melt the butter. Add the chopped onion and minced garlic, sautéing until the onion is translucent, which should take about 3-4 minutes.
  3. Stir in the shrimp and scallops, cooking for approximately 3 minutes until the shrimp turns pink and scallops are opaque.
  4. Pour in the white grape juice, allowing it to simmer for 2 minutes. This will enhance the flavors of the seafood.
  5. Stir in the heavy cream, and season with salt and pepper. Mix until everything is well combined and creamy.
  6. Carefully transfer the seafood mixture to a baking dish. Top generously with grated cheese to create a delightful crust.
  7. Preheat your oven to 180°C (350°F) and bake for 15 minutes, or until the cheese is bubbly and golden brown.
  8. Remove from the oven and let the gratin cool for a few minutes before serving.
