Ingredients

  • 8 oz (226 g) cream cheese, softened
  • 1/2 cup (60 g) powdered sugar
  • 1 tsp (5 mL) vanilla extract
  • 1/4 cup (60 g) fresh strawberries, pureed
  • 1 cup (120 g) graham cracker crumbs
  • 1 cup (150 g) fresh strawberries, whole (for filling)
  • 1/2 cup (85 g) white chocolate chips (optional, for drizzling)
  • 1/4 cup (60 mL) vegetable oil (for frying, if frying)
  • Pinch of salt

Instructions

  1. In a medium bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and a pinch of salt. Mix until smooth and creamy.
  2. Fold in the pureed strawberries to the cream cheese mixture until well combined.
  3. Take a tablespoon of the cream cheese mixture and flatten it in your palm. Place a whole fresh strawberry in the center and carefully wrap the cream cheese around it to form a ball. Repeat with the remaining mixture and strawberries.
  4. Once all the balls are formed, roll them in the graham cracker crumbs until fully coated. Place them onto a baking sheet lined with parchment paper.
  5. For a crunchy texture, place the bites in the refrigerator for about 30 minutes to firm up. If you prefer them fried, heat vegetable oil in a deep skillet over medium heat.
  6. If frying, gently add a few bites at a time into the hot oil, frying until golden brown (about 2–3 minutes). Remove and drain on paper towels.
  7. If using white chocolate, melt the chocolate chips in a microwave or double boiler, stirring until smooth. Drizzle over the bites before serving.
  8. Serve chilled or warm.
