Chipotle Bowl with Chicken & Cauliflower Rice
Use leftover rotisserie chicken for quick prep and extra flavor. Toast the cauliflower rice until golden to deepen flavor and maintain a firmer texture. Serve immediately so the cauliflower rice stays crisp and the cheese melts slightly.

Ingredients
- 0.5 Tbsp avocado oil (or olive oil)
- 0.5 cup cauliflower rice
- 0.5 tsp salt (divided into 0.25 tsp servings)
- 0.5 red, orange, or yellow bell pepper (sliced)
- 0.5 small yellow onion
- 0.5 cup cooked chicken (shredded or cubed, preferably rotisserie chicken)
- 2 Tbsp pico de gallo
- 1 Tbsp guacamole
- 1 Tbsp sour cream (or Greek yogurt)
- 0.25 cup taco cheese blend
- fresh cilantro
Instructions
- Heat 0.5 tbsp of olive oil in a pan. Add the cauliflower rice and 0.25 tsp of salt. Stir occasionally with a wooden spoon till the sides are golden brown for about 3-5 minutes. Add to the bottom of a small bowl.
- Add the other 0.5 tsp of avocado or olive oil to the same pan. Add the pepper and onion and saute for about 8 minutes or until the vegetables softened. Add to the bowl.
- In a quarter of the bowl add chicken, guacamole, and pico de gallo.
- In the center place the sour cream or Greek yogurt.
- Sprinkle the bowl with cheese and garnish with fresh chopped cilantro.
