Pan-Fried Walleye Recipe

Pan-Fried Walleye Recipe

Pat fillets very dry to promote browning and a crisp crust. Set up an organized dredging station to keep the process efficient and clean. Optional resting of dredged fillets (10–15 minutes) improves adhesion and crispiness. Maintain oil at 350–375°F; too cool = greasy, too hot = burnt coating. Do not overcrowd the pan; cook in batches to keep oil temperature stable. Use a heavy skillet (cast iron preferred) for even heat and better browning. Butter adds flavor and browning but is optional; combine with oil to raise smoke point. For extra crunch, include the 1/4 cup cornmeal; omit for a smoother coating. Gluten-free adaptation: use a gluten-free flour blend (texture will vary). If using frozen walleye, thaw fully in the fridge (or cold water method) and pat dry before cooking. Alternative methods: bake at 400°F for 12–15 minutes or air-fry at 400°F for 8–12 minutes (less crispy than pan-frying). To hold briefly, keep cooked fillets on a rack in a 200°F oven; serve ASAP for peak crispiness. Storage: refrigerate leftovers in an airtight container 2–3 days; reheat in oven or air fryer to regain some crispness. Season the dredge to taste; you can adjust salt, pepper, or add smoked paprika. Lemon wedges brighten the dish; drizzle pan drippings over fish if desired.

Time: Prep: 20 mins, Cook: 15-20 mins, Total: 35-40 mins

Servings: 4-6

Ingredients

  • Walleye fillets — 1.5 to 2 lb (about 4–6 fillets), skin-on or skin-off
  • All-purpose flour — 1 cup
  • Cornmeal (optional, for extra crunch) — 1/4 cup
  • Kosher or sea salt — 1.5 tsp (plus a pinch to season fillets)
  • Black pepper — 1 tsp (plus a pinch to season fillets)
  • Paprika — 1 tsp
  • Garlic powder — 1 tsp
  • Onion powder — 1 tsp
  • Dried herbs (optional; e.g., thyme, oregano, or parsley) — 1 tsp total
  • Vegetable or canola oil — 1/2 cup (for frying)
  • Butter (optional) — 2 tbsp
  • Lemon wedges — for serving

Instructions

  1. Pat the walleye fillets very dry with paper towels; lightly season both sides with a pinch of salt and pepper.
  2. In a shallow dish, whisk together flour, cornmeal (if using), 1.5 tsp salt, 1 tsp black pepper, paprika, garlic powder, onion powder, and dried herbs (if using).
  3. Dredge each fillet in the flour mixture, pressing to adhere and shaking off excess. Optional: rest dredged fillets on a rack 10–15 minutes.
  4. Heat a large heavy skillet over medium-high. Add oil to 1/4–1/2 inch depth. When hot, add butter (optional) and let it foam. Oil should be about 350–375°F.
  5. Working in batches without overcrowding, add fillets and fry 3–5 minutes per side until deep golden brown, opaque, and flaky (internal temp about 145°F). Adjust heat to prevent burning.
  6. Transfer to a rack lined with paper towels to drain. Serve immediately with lemon wedges.
