For alcohol-free deglazing, use vegetable or mushroom broth; a splash of balsamic or red wine vinegar adds depth. Use tamari for a gluten-free option; verify plant milk and vegan butter are gluten-free if needed. Optional mushrooms can be omitted; increase lentils slightly or add chopped nuts (walnuts/pecans) for umami and texture. For extra creamy potatoes, use fuller-fat plant milk and a bit more vegan butter, or add vegan cream cheese/sour cream. For a crisper topping, brush with melted vegan butter or olive oil; sprinkle breadcrumbs or panko before baking. Assemble up to 24 hours ahead; refrigerate covered and add a few minutes to bake time if starting cold. Freezes well: wrap tightly and freeze up to 3 months; thaw overnight or bake from frozen, adding 30–40 minutes. Let the pie rest 5–10 minutes before serving to help the filling set. Use low-sodium broth to better control salt levels.

  • 1 cup dried brown or green lentils
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • 1 large yellow onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 8 oz mushrooms, sliced
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1/2 cup red wine (optional)
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1 bay leaf
  • 1 cup frozen peas
  • 1 cup corn kernels (frozen or canned; drain if canned)
  • 1 tbsp soy sauce or tamari
  • Salt and black pepper, to taste
  • 4 lb russet potatoes, peeled and quartered
  • 1 cup unsweetened plant-based milk
  • 4 tbsp vegan butter
  • 2 tbsp nutritional yeast (optional)
  • Salt and white pepper, to taste

Instructions

  1. Rinse lentils under cold water until the water runs clear.
  2. Cook lentils in 4 cups vegetable broth: bring to a boil, then reduce to low, cover, and simmer 20–25 minutes until tender but holding shape; drain excess liquid if needed and set aside.
  3. Heat olive oil over medium in a large pot/Dutch oven; sauté onion, carrots, and celery 8–10 minutes until softened and translucent.
  4. Add mushrooms and garlic; sauté 5–7 minutes until mushrooms soften and release moisture.
  5. Stir in tomato paste, thyme, rosemary, and bay leaf; cook 1–2 minutes until fragrant and slightly caramelized.
  6. Deglaze with red wine (if using); cook 2–3 minutes to reduce slightly, scraping up browned bits.
  7. Add cooked lentils; stir to combine. Reduce heat to low, cover, and simmer 15–20 minutes, stirring occasionally.
  8. Stir in peas, corn, and soy sauce/tamari; cook 5 minutes. Season with salt and black pepper to taste and remove bay leaf.
  9. Meanwhile, place potatoes in a large pot, cover with cold water, salt the water, bring to a boil, then simmer 15–20 minutes until fork-tender; drain well.
  10. Mash potatoes; gradually mix in plant-based milk and vegan butter until smooth and creamy. Stir in nutritional yeast (if using). Season with salt and white pepper to taste.
  11. Preheat oven to 375°F (190°C).
  12. Spread the lentil-vegetable filling in a 9×13 inch baking dish. Top evenly with mashed potatoes (spoon or pipe).
  13. Bake 20–25 minutes until the top is golden and heated through. For extra color, broil 1–2 minutes, watching closely.
  14. Rest 5–10 minutes before serving.
